Try your own IT department first

It appears that you have gained a reasonable understanding of systems with your current company and are now keen to become a full-time IT professional (though you do not say why). The experience you have gained in UAT and analysis of systems issues will stand you in good stead moving to an IT role.
In the first instance, I am surprised you are looking to change companies - I believe with your in-depth knowledge of your organisation, its business processes and systems that you are best qualified to work in your own IT department.
If you have explored this and it is not feasible, my recommendation is to target companies within the same sector where your business knowledge is most transferable. I recommend targeting roles that involve a high level of business analysis or project management as this seems to be where your strengths lie. More technical roles may be harder to secure as it does not sound like you have hands-on coding expertise.
